MidKnight Snacks: Viral TikTok Recipes

During the pandemic, many people had to tap into their creativity in the kitchen. TikTok users took to the internet to share their creations using new and old recipes. I found myself gravitating to watching these videos and experimenting with new recipes taking away and adding what suited my taste. These are a few of my top three recipes in my rotation. They are my favorites because they can always be perfected. The recipes are simple, easy and can be shared with family and friends.

Baked Feta Pasta


  • 2 pt. cherry or grape tomatoes
  • 1 shallot, quartered
  • 3 cloves garlic, smashed
  • 1/2 c. extra-virgin olive oil, divided
  • Kosher salt
  • Pinch crushed red pepper flakes
  • 1 (8-oz.) block feta
  • 3 sprigs fresh thyme
  • 10 oz. pasta
  • Zest of 1 lemon (optional)
  • Fresh basil, for garnish
  • 1 cup of spinach


  1. Preheat the oven to 400 degrees. In a large ovenproof skillet or medium baking dish, combine tomatoes, shallot, garlic and all but 1 tablespoon of oil. Season with salt and red pepper flakes and toss to combine.
  2. Place feta into the center of the tomato mixture and drizzle with the remaining 1 tablespoon of oil. Scatter thyme sprigs over tomatoes. Bake for 40 to 45 minutes, until tomatoes are bursting and feta is golden on top.
  3. Meanwhile, in a large pot of boiling salted water, cook pasta until al dente according to package directions. Reserve ½ cup of pasta water before draining.
  4. To skillet with tomatoes and feta, add cooked pasta, reserved pasta water, spinach, and lemon zest (if using) and stir until combined. Garnish with basil.

2. Green Goddess Salad

Dressing Ingredients

  • Juice of 2 lemons
  • 1/4 cup olive oil
  • 2 tbsp rice vinegar
  • 2 cloves garlic
  • 1 small shallot
  • 1 cup fresh basil
  • 1 cup spinach
  • 1/4 cup sunflower seeds
  • 1 tsp salt

Salad Base

  • 1 small cabbage finely diced
  • 4 Persian cucumbers finely diced
  • 1 bunch of green onions sliced
  • 1/4 cup of chives sliced


  1. Finely dice or chop green cabbage, chopped cucumbers and chopped green onions to a bowl.
  2. In a blender or food processor, add the dressing ingredients and liquids first: lemon juice, olive oil, rice vinegar, shallot, basil leaves, spinach, sunflower seeds, and salt. Blend until smooth without any chunks of vegetables leftover.
  3. Add the dressing to the bowl with the diced vegetables and mix well.

Brown Butter Chocolate Chip Cookies


  • 1/2 cup unsalted butter, browned
  • 1/2 cup granulated sugar
  • 3/4 cup brown sugar
  • 1 egg
  • Splash of vanilla
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 3/4 cup dark chocolate chunks



  • In a small saucepan, cook butter over medium-high heat until it has melted down and taken on a dark amber hue. Once it has reached this stage, remove it from the heat.
  • In a large bowl, combine browned butter, granulated sugar, and brown sugar until the mixture looks like wet sand.
  • Add in egg and vanilla, stirring until they are just fully incorporated.
  • Sift flour and baking soda into the mixture, and gently fold the ingredients together until they are just combined. Make sure not to overmix the dough.
  • Add in most of the dark chocolate chips, saving a few tablespoons to roll the dough balls in before baking.
  • Chill dough for 30 minutes, covered.
  • Line a cookie sheet with non-wax parchment paper.
  • Remove the dough from the fridge, and scoop 1 tablespoon portions about 2 inches apart on your prepared cookie tray. Gently roll each ball of dough in the reserved chocolate chunks before placing the tray in the oven.
  • Bake for 12-14 minutes, or until the cookies are golden brown on the bottom.
  • Once the cookies are golden and fully cooked through, remove the tray from the oven and place the cookies on a cooling rack to chill for a few minutes.
